When I received my cookie sheet I tested it with a magnet - it is magnetic which signifies it is not 18/10. The cookie sheet is produced from 18/ stainless steel, not 18/10. The steel we utilized to generate cookie sheets recently was 18/ and not 18/ten. We're not positive if this was a mix up from our steel supplier, or a mistake we created internally when the cookie sheets had been manufactured. That is all getting reviewed by our manufacturing team right here in Wisconsin.
18/ten steel and 18/ steel are completely identical. The second quantity in a steels formulation is Nickel. 18/10 steel signifies that the steel is comprised of 18% Chromium (which offers steel its classic look) and 10% nickel (Nickel give steel far more tensile strength and provides a higher resistance to corrosion over time). 18/ stainless steel contains the identical % of Chromium but contains no Nickel. Glad I could get a cookie sheet produced in the USA that does not have non-stick on it!
They do warp in the oven at times, but consistently lay flat after cooling. I have found baked goods want a couple of extra minutes to cook on stainless steel. I generally line with parchment. Clean up is very easy too.
I have a number of of American Kitchens's items. None have disppointed.
